Corn and Black Bean Yummy Tummy!



On May 28, I saw this Corn and Black Bean recipe and it looked so yummy that I ran right home and made it!  I had it for several days and I cannot wait to make it again.  I think I may take this to the family reunion.

I did improvise the recipe with what I had at home already and here is what I used.
I did not have any canned corn and actually prefer frozen corn. I put a whole bag of white frozen corn in the microwave and warmed it just until it was no longer frozen.
I added a can of rinsed black beans.
I could not find the fresh tomatoes as hubby had put them on the wrong shelf, so I added a can of diced tomatoes.
I am not crazy about red onions, so I cut up a sweet vidalia onion.
I added some cilantro and garlic cloves from a jar that I purchase (refrigerated fresh kind).

I did not mix the dressing separately, but put the ingredients right on top and then stirred it all up.
I put in some sugar (I have no idea how much), splash of vinegar, splash of canola oil, lime juice, salt, pepper, and lots of cumin (because I love cumin!).
