8/16/2015 For lunch today (when we have our big meal) I decided to try a new recipe. Hubby made the microwave bacon while I mixed the batter. Oh, yum bacon! I wanted to eat it off he plate instead of putting it in the muffins.
I put the bacon into the batter anyway.
How do people manage to fill muffin tins without making a mess on the top of the tin?
Here they are coming out of the oven! Oh these were yummy!
Here is the recipe.
1 1/2 cup flour (I used bread flour because that's what I had on hand)
1 tablespoon sugar (which I don't like sweet, so this appealed to me!)
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
Put all of the above in a bowl and mix.
1 egg
1 cup milk
1/4 cup maple syrup (I just used pancake syrup as I had it on hand, but I'm sure the good stuff would be even better)
2 tablespoon canola oil
1 tsp. vanilla
Put all of the above in a bowl and mix. I did all the mixing by hand.
Combine the wet into the dry. Stir in 1 cup cooked, crumbled bacon.
Bake at 400 degrees for 15 minutes or until golden brown.
Drizzle with additional maple syrup, as desired.
Then I sliced some pork up into thin strips and added it to the pan with some olive oil already getting hot as I cut.
I added some rubbed sage and some basil spices from a jar. When it was all cooked, I added two tablespoons of butter and let that melt into it all.
So here is my plate! I added blueberries for color. I drizzled syrup over everything.
I thought the idea of having pancakes in the form of a muffin a fun twist.
Oh, and as it good! Hubby even went back for two more pancake bacon muffins and more pork! He rarely gets seconds. I'm glad he liked them. I did try a third muffin, but only to see how it tasted with butter rather than syrup. It tasted good that way too.
I thought the muffin and the pork an odd combination, but it really worked!
