1/2 recipe
1 cup oatmeal
2 cup boiling water
1 tablespoon butter
1 teas salt
1 package yeast
1/4 cup warm water
1/4 cup brown sugar
1/4 cup honey
5 cups flour
Pour boiling water over oatmeal and let cool. Add butter, salt, yeast first dissolved in warm water, brown sugar, and honey. Stir in the flour to make a soft dough. Let rise until double (about 45 minutes to an hour). Punch down and let rise again (about 45 minutes to an hour). Put into 2 loaf pans and let rise until double and bake at 350° for 50 minutes.

I have never been able to bake with with yeast, so I have avoided doing so. Recently I decided to have a go at it again and have been playing with bread recipes. After a few that were "just okay, but not keepers" I tried this recipe and decided it was a keeper. Since I am building the recipes that I want to use as my own stash online, here I am sharing with you. This made two loaves and we ate every day on them for over a week. At first I kept it wrapped in a linen cloth on the cutting board and loved the way it looked in the kitchen, but eventually I moved it to a gallon size bag on the kitchen counter. I am thinking if I keep this up, making my own bread instead of buying, I may need to find some sort of fancy bread container for the counter. Hmmmm.
Yes, it takes a long time to make bread from scratch with all three rising times from 45 minutes to an hour and then the baking time. I find it a good time to make myself focus on other tasks around the house or a good book. Bread making is a lesson in patience.
When I let my dough rise I through a linen towel over the bowl or pans. I love the way the linen towel looks as if I am doing something old-fashioned and heartwarming for my home.
