The word "Thymus" is from the ancient Greek word "thymos.
The word "citriodorus" means "lemon-scented"
Here is the video I did in September 2019 on how I dried and used herbs.
This is one of the few herbs I enjoy using in cooking, so I dry it several times a year by hanging it upside down or by putting it a big bowl and tossing it once a day or so. Then I put it in a gallon-size baggie and carefully crunch it between my fingers allowing the leaves to fall in the bag and grabbing the stems to toss them away. It is tedious work, but then again it is therapeutic in its own way. The stems are quite small and it takes patience to get them all out. I like to put these in shortbread cookies or scones.
The aroma reaches its peak just before flowering, so it is best to harvest before the plant flowers. If allowed to flower, the flowers are pale lilac. They remind me a bit of clover flowers, which are white.
The plant tolerates drought, which is why it grows well in my hard-to-grow-anything soil. It does not like wet soils.
This plant is a perennial, but when the Winter is mild, the leaves are evergreen.
The herb can be used in many dishes, either fresh or dried, including salads, soups, sauces, stews, cookies, pastries, and meat.

I always spell "thyme" wrong! I know it has an "h" in it but I cannot figure out where it goes, so I just leave it out. Laughing at myself.

This was the year my husband and I had a battle over the garden and I told him if he wanted to control it, then he could do it all. He had no idea what he was doing and he eventually learned his lesson and gave up the garden to me. He let the Lemon Thyme go to full bloom and had no idea it was even Lemon Thyme or that it needed to be cut. This gave me an opportunity to get it in full bloom though!
