This is SO not in my diet budget, but it is SO yummy! It is awesome because you get the cookie dough flavor without the dangerous raw eggs. There is no baking, but be sure to allow plenty of refrigerator time (4 hours!). I do not usually like overly sweet foods, but this rich cookie dough fudge just calls out to me. Be sure to cut into small pieces because a little bit will do ya!
For the cookie dough layer:
1 stick (1/2 cup) unsalted butter, softened
3/4 cup brown sugar (light for lighter color)
1 teaspoon vanilla extract
2 cups flour
1 14-ounce can sweetened condensed milk
2 cups mini chocolate chips
For chocolate layer:
1 cup mini chocolate chips
1/4 cup heavy cream
Line a 9 x 9 or 8 x 8 square pan with parchment paper, covering the sides of the pan. Mix softened butter and brown sugar in mixer until fluffy. Add vanilla. Alternate adding flour and sweetened condensed milk. Add mini chocolate chips (folding in my hand best). Press evenly into pan. A spatula helps to press dough out evenly. Cover and refrigerate at least 3 hours or overnight.
Microwave 1 cup mini chips and cream for 1 minute. Stir. If necessary, microwave again 15 seconds at a time. Pour over cookie dough layer. Chill one hour.
To remove from pan, pull up on parchment paper and remove from pan. Cut into small squares.
