Cast Iron Pancakes

We were pondering what to eat and I had gotten out some old cookbooks and everything I suggested, hubby thought sounded too hard, but when I read this recipe, he was all "go" so we did, although he ended up going to the grocery store while I made it.

I did change up the recipe slightly. It called for pears, but I did not have any, so I used blueberries. I suppose any fruit would work and would be fun to play with. I only put blueberries on half because hubby does not like fruit. Goodness, was the fresh fruit spot on delicious with this recipe! I also used an almond flour by Red Mill.

Melt a little butter to coat the bottom of an cast-iron skillet and add your choice of fruit.

Mix 4 eggs, 1 cup milk, 2/3 cup butter, 3 tablespoons sugar, and some vanilla in a blender. Bake at 375 degrees for 35 minutes.

Our blender is 35 years old. I bought a good brand, Oster, and it was supposed to last forever, but it never did work well I suppose. Now even more buttons are falling off. I really would love a new blender and/or food processor. I've never owned a good food processor.

I used a sifter to sprinkle on powdered sugar, but it disappeared into the pancake!

It did not slice well, but probably because I did not let it cool, but that was okay because if was fabulous nice and warm.

With all that butter and sugar already in it, it did not even really need any syrup, but we forced ourselves to use it anyway. Grin.

Hubby at his entire half, but I had some left over for tomorrow.
